Today has been a good day. Church and spending an afternoon with my family (John and Graysen). We went to the mall after church just to walk around. We do this occasionally and well it’s just sort of fun to get out. Then we came home and took a much needed nap. Tonight I made Chile Rellenos (My mother-in -laws recipie- she is a super awesome cook! ). I thought I would share it since I love it so much.
Chile Rellenos:
So first you have to have a wonderful Mother-In-Law who will bring you Hatch Green Chiles from New Mexico.
Next cook the ground beef and onions in a skillet.
Next: Put your ground meat and onion mixture in the chilies and add a bit of cheddar cheese.
Then roll and make the topping.
After you mix 1 1/2 cups milk, 4 eggs, 1/4 cup flour and a bit of salt and pepper you can pour the mixture over the chilies.
Bake at 350 degrees for 30 to 45 minute until it puffs. After the top is puffed you add a bit of cheddar cheese and then it looks like this:
We followed dinner with Turnovers since I’m not technically starting the diet until tomorrow.
